Here are some recipes that I have used many times, and enjoy.
5 cups sliced pared apples
Grease a deep baking dish (1 ½ quart size). Peel and core apples, and slice thinly. Then arrange apples in the prepared baking dish. Combine lemon juice and water. Sprinkle over apples. Sprinkle with granulated sugar, 1 tablespoon cinnamon and nutmeg.
Cream butter, gradually add brown sugar. Mix the dry oatmeal, flour and cinnamon in a bowl with your hands. Blend the oatmeal mixture into the butter and brown sugar. Spread over apples and pack down firmly. Bake in oven preheated to 375 oF for 35 to 45 minutes. Serve warm with ice cream.
2 cups all-purpose flour
In a large mixing bowl, combine the flour and sugar. In a heavy saucepan, combine butter, shortening, coffee or water, and cocoa. Stir and heat to boiling. Pour boiling mixture over the flour and sugar in the bowl. Add the buttermilk, eggs, baking soda and vanilla. Mix well, using a wooden spoon or high speed electric mixer. Pour into a well-buttered 17 ½ by 11 inch jelly roll pan.
Bake at 400 oF for 20 minutes or until brownies test done in the centre.
While brownies bake, prepare the frosting. In a saucepan, combine the butter, cocoa and milk. Heat to boiling while stirring. Mix in the powdered sugar and vanilla and mix until frosting is smooth. Pour warm frosting over brownies as soon as you take them out of the oven. Cool and cut into pieces.
